Featured Eats: Valentine’s Day Sugar Cookie Bars

Valentine’s Day is one of my favorite holidays when it comes to baking because everything is pink or chocolate! This sprinkle mix caught my eye recently and I knew they’d be perfect on my sugar cookie bars!
I’ve made a few variations of this recipe over the years, including lemon, hazelnut, and Fruity Pebbles. They are easy to make and can easily be customized. Valentine’s Day Sugar Cookie Bars
FOR THE COOKIES:
2 cups flour
½ tsp. Salt
¼ tsp. Baking powder (aluminum-free)
¾ cup salted butter, room temperature
1 cup of sugar
2 eggs, room temperature
½ tsp. Pure vanilla extract
½ tsp. Almond extract
FOR THE FROSTING:
4 oz. cream cheese, room temperature
¼ cup butter, room temperature
2 ½ cups powdered sugar
1 tsp. Pure vanilla extract
2 Tbsp. heavy cream
Pink food coloring & sprinkles, optional
FOR THE COOKIE BARS:
- Preheat oven to 350F. Grease 8” x 8” baking pan, then set aside.
- In a medium-sized mixing bowl whisk together flour, salt, and baking powder. Set aside.
- In the bowl of a standing mixer fitted with the paddle attachment (or a hand mixer), beat the butter and sugar on medium speed until smooth and creamy. Add eggs and extracts, mixing until smooth. Use a rubber spatula to scrape down the sides and bottom of the bowl as necessary. Gradually add flour mixture and continue mixing on low speed until combined.
- Transfer to prepared baking pan and smooth to create an even layer. Bake for 25 – 30 minutes, until edges are golden and the middle is set.
FOR THE FROSTING:
- In the bowl of a standing mixer fitted with the paddle attachment, beat the cream cheese and butter on medium speed until smooth and creamy.
- Decrease speed to low and alternate adding the powdered sugar and heavy cream until it reaches desired consistency.
- Add vanilla extract and food coloring, then mix on medium-high speed until combined and fluffy, about 1 – 2 minutes. Use a rubber spatula to scrape down the sides of the bowl as necessary.
- Remove cooled cookies from the pan and then spread frosting on top. Add sprinkles and cut into squares to serve.
