How is it already March?! 2019 is flying by. I’m excited to share this brownie recipe that is perfect for St. Patrick’s Day!
These brownies don’t call for any flour, so they are dense and fudgy! The buttercream on top make them even more decadent and festive. One of my favorite flavor combinations is chocolate and mint, and the green color associated with mint is ideal for this holiday. This recipe can easily be customized by switching out the mint chips for another kind of chocolate chip or nut. Also, you could leave off the buttercream or make it a different flavor. The options are endless.

Flourless Mint Chocolate Brownies
For the Brownies
- 6 Tbsp. unsalted butter
- 3/4 cup sugar
- 1 ¼ cups semi-sweet chocolate chips
- 2 large eggs, room temperature
- 1 tsp. vanilla extract
- 1 Tbsp. dark cocoa powder
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/2 cup Andes creme de menthes chips
For the Mint Buttercream
- 1/2 cup unsalted butter room temperature
- 2 cups powdered sugar
- 1 Tbsp. heavy cream
- 1/4 tsp. vanilla extract
- 1/4 tsp. mint extract
- pinch of salt
- Green food coloring
Instructions
Brownies
- Preheat oven to 350F. Line an 8″ x 8″ baking pan with foil and lightly coat with cooking spray. Set aside.
- Melt the butter in a small saucepan over low heat. Add sugar and stir until combined. Add chocolate chips, stirring until smooth. Remove from heat and add the eggs one at a time. Stir in vanilla until incorporated.
- In a small bowl, whisk together cocoa powder, cornstarch and salt. Add to chocolate mixture and use a hand mixer on high speed to beat the batter until smooth and shiny. Gently fold in the mint chips. Pour into prepared baking pan.
- Bake for 25 – 30 minutes until the brownies are set in the center. Remove and let cool.
Mint Buttercream
- In the bowl of a standing mixer fitted with the paddle attachment, beat the butter on medium speed for one minute. Gradually add powdered sugar, mixing until combined. Add heavy cream, vanilla extract, mint extract, pinch of salt and green food coloring. Mix until light and fluffy, about 2 to 3 minutes. Scrape down the sides and bottom of the bowl with a rubber spatula if necessary.
- Spread over cooled brownies. Cut into squares to serve.
