Featured Eats: Coconut Macaroons with Nutella and Chocolate Eggs

This post was written by guest blogger, Jamie Kamber.

Happy spring, hillheady readers! I’m excited to share this Easter recipe with you because it will be a hit at any friend or family get-together. ‘Tis the season for coconut and Cadbury eggs, and why not throw in some Nutella for good measure? These tasty treats are easy to make, require minimal ingredients and look really cute 🙂 You can find more delicious desserts on my blog, JamieKamber.com, and Instagram (@jamiekamber).

Coconut Macaroons with Nutella and Chocolate Eggs

Ingredients

  • 2/3 cup flour
  • 5 cups coconut
  • 1/4 tsp. salt
  • 1 14 oz. can sweetened condensed milk
  • 2 tsp. vanilla
  • 1 cup Nutella
  • Cadbury milk chocolate eggs

Directions

  • Preheat oven to 350F.
  • Line cookie sheet with parchment paper and set aside.
  • Combine flour, coconut, salt, sweetened condensed milk and vanilla in a large bowl, until dough forms.
  • Drop by spoonful onto the prepared cookie sheet. Use your thumb or a spoon to make an indentation in the center to form a nest shape.
  • Bake for 12 – 15 minutes, until the coconut begins to lightly brown. Remove from the oven and let cool.
  • When completely cooled, fill each nest with 1 – 2 tsp. of Nutella and top with a few Cadbury eggs. Enjoy!

Uumm, how adorable and fun are these?! I’m so awful at food related projects but I need to try this myself for Easter. I love how small and easy they are to make 🙂

These sound right up my alley. I mean, Cadbury Eggs and Nutella? It doesn’t get much better than that already – and you add COCONUT?! Yes please. This gal needs this treat in her life right away. Next baking challenge, for sure.
